Gnocchi with creamy tomato & spinach sauce

Method

  1. Heat the olive oil in a frying pan. Fry the garlic until golden, then add the tomatoes. Season, then simmer for 10 mins. Stir in mascarpone, then cook for 2 mins more.
  2. Meanwhile, boil the gnocchi according to pack instructions. Add the spinach for the final min of cooking. Drain well, pour back into the pan, then stir the sauce through. Mix well and serve immediately with basil leaves and Parmesan shavings scattered over, if you like.

Gnocchi - small potato dumplings - are popular in northern Italy. You could also try tossing this sauce through 400g cooked pasta.

    I made this last night and it was really tasty. I added some bacon when I was frying the garlic. It was really saucy aswell. Very nice!

    This recipe is absolutely delicious. I added some tomato puree to the sauce which enhanced the flavour, together with a little black pepper. As I am vegetarian, I fried up some pancetta seperately and sprinkled it over my husbands, which he thought really made the dish. I will definitely make this again, and would highly recommend it. Really yummy!

    I also added quite a bit of black pepper and the basil as suggested. It was lovely with a strong cheddar grated over the top (no parmesan as I am a veggie and vegetarian parmesan isn't very widely available).

    Enjoyed this recipe for a quick and tasty midweek meal. Thinking it might be a bit bland, and following previous comments, I added two bacon rashers when frying the garlic, and also some mushrooms as I had some to use up (don't think they added anything special, but did help cut down my food waste). I also stirred the spinach through the sauce to wilt rather than with the gnocchi and used low-fat soft cheese instead of marscapone. So not quite the original recipe, but tasty all the same!

    Yum! This was absolutely delish and such a simple dish to make! I added some cubed smoked bacon which went really well with the other flavours. Will be making again tonight as it's ideal for feeding a big group of people, a firm favourite in our house from now on!

    Very tasty indeed - I also added the pancetta cubes and I felt that this improved the dish a lot. Without it, it really wouldn't be as nice.
