Method

  1. preheat the oven to 160/325/gas3/ measure all ingredients into large bowl and beat well for 2 min then pour in to a 2litre loaf tin that has been well greased. bake for 1-1/2 hours or until skewer comes out of cake clean. leave to cool in tin for 10min and turn out .enjoy with a nice cuppa

    I had intended to make one as per recipe using apricots and ground almonds and another one using cherries, sultanas and coconut. All went well until I split the mixture. I added the apricots and ground almonds to half but instead of adding the cherries, sultanas and coconut to the other half I added to the apricot mixture! Then mixed all together and poured into the 2 tins. Delicious, even if discovered by default!!

    This cake is delicious and when apricots are plentiful I make a few and put them in the freezer. I also used half coconut and half almonds. Any body who has had a slice of it come back for more.

    Just made this cake, using half almonds and half coconut. Only had 1 orange to zest, and the mix seemed a little stiff so added a splash of milk. It's absolutely delicious and I will definitely be making it again.
