Surfing Santa
A festive cocktail with Christmas spice, from the Lusty Glaze bar in Cornwall

- Muddle the halved clementines in a jug with star anise and add ice. Pour over gin, Chambord, red wine, fresh orange juice and the whole cinnamon sticks and stir well. Serve in Champagne flutes and garnish with a curl of clementine skin.
