Pasta with smoky sausage ragu

Method

  1. Heat 1tbsp olive oil in a non-stick pan. Pinch small pieces of sausage into the pan then cook until browned. Add the garlic and cook for a minute then add the spices and cook for another minute. Tip in the tomatoes and wine then simmer for 20 minutes. Stir the parsley in.
  2. Cook the rigatoni following pack instructions then toss with the sauce.

    Simple, delicious, filling - all good! The unskinned sausage meat looked like it was going to turn into one big pattie when they were all added to the pan, but once they started to brown they broke up just like in the picture. The red wine really added something special. Brilliant.

    This was delicious. I roasted some additional veg consisting of mushrooms, corn, tomatoes. courgettes and onions and added them in with the pasta at the end. It looked and tasted amazing. I will definitely be adding this dish to one of my regulars.

    This was really tasty although there was too much fennel for my personal taste, I would half the fennel seeds next time. I added some cauliflower and broccoli florets to bulk it up, I then covered it in grated cheese and put it under the grill. Yummy.

    I liked the fennel seeds adding just a hint of flavour in this. Wasn't at all over powering and certainly gave a warmth to it that made us feel cosy on a nasty autumn night. I was cooking for 3 so substituted the sausage for some mincemeat balls which I had in the freezer and added a drop more wine. Made plenty.

    Really lovely, i skipped the wine and it was fine. Mine simmered for more like 30 minutes but i do like my sauces to thicken up well. Served it with good quality bronze die rigatoni (definately worth it but only when it's on special offer!)

    delicious and really quick and easy to make. i used regular paprika as i didn't have smoked and grated cheese on top. next time i would add onions and possibly some bacon.

    This is a new favorite for me! Tried it last night.. with the addition of a couple of chopped shallots a chopped round courgette and some smoked bacon! Mmmm!

    I used Waitrose sausagemeat seasoned with black pepper & nutmeg (prepacked), added some mushrooms, a bit more than a splash of wine and a small carton of passata: it went down very well with some penne. Was a bit too much for 2 but we hadit again the next day for lunch with some chilli chips. Will definitely make again :)
