Pasta with smoky sausage ragu

Method

  1. Heat 1tbsp olive oil in a non-stick pan. Pinch small pieces of sausage into the pan then cook until browned. Add the garlic and cook for a minute then add the spices and cook for another minute. Tip in the tomatoes and wine then simmer for 20 minutes. Stir the parsley in.
  2. Cook the rigatoni following pack instructions then toss with the sauce.

    Loved this! I used hot Italian sausages, otherwise followed the recipe. Very flavorsome sauce and simple, quick and easy. Would be a hassle free entertaining dish.

    Made this last night and it was delicious - I added some mascarpone to the sauce, but that was only because it was in the fridge and needed to be used! Made it taste very luxurious! Kids loved it

    i am not sure i will be making this again. i made the same amount of sauce but served between 3 people and i found that this was ok but would be too much for 2 people. however, i did use plain paparika as i couldnt find any smoked, so maybe this effected the yummyness of the dish!

    We loved this, kids included although they did notice the kick to it with the chilli flakes! The fennel seeds with the tomato sauce were great together.... delicious!

    Amazing! Went off script a little and used chirzo instead of the paprika (same thing I figured and made it a little meatier and comforting). It was sweet and savoury and the consistency was perfect and clung to the rigatoni beautifully. I'm in the good books with the missus!
