Kohlrabi & celery remoulade

Look out for this pale green veg says Matt Tebbutt, it makes a nice change from celeriac in this recipe

Method

  1. Remove any outer leaves and tough-looking bits from the kohlrabi bulb. Thinly slice on a mandolin then cut into matchsticks. Mix the sugar and vinegar in a large bowl then add the celery and kohlrabi. Cover and leave to marinate for 20 minutes. Drain well.
  2. Mix the mayonnaise with both the mustards and toss through the vegetables, using just enough to bind them. Stir in the chopped herbs and season. To serve, spoon a generous quantity of the remoulade onto a plate and top with smoked salmon.

Honey roast kohlrabi: Roast whole small kohlrabi with thyme and honey and serve with a Sunday roast.
Kohlrabi stir-fry: Shred into matchsticks then stir fry with shredded carrot, winter greens, ginger and garlic. Finish with a splash of sesame oil.

    This was a great recipe for the couple of kohlrabis that turned up in our veg box last week! I followed the recipe exactly, but felt that the veggies were far too sweet when I drained them so gave them a quick rinse in the colander to was off some of the sugar. I would half the amount of sugar next time. I served it with poached salmon and it was enjoyed by all......

    I too did this recipe after a Kohlrabi turned up in my veg box and I really enjoyed this, so did the husband. I used two tbsp s sweeter instead as Im on slimming world but I would prob use one next time... I know there is a kohlrabi in next weeks box so it may be on the menu again. It went great with the smoked salmon, great fresh taste combo

  • 1-2 bulbs kohlrabi , about 600g in total
  • 2 tbsp golden caster sugar
  • 3 tbsp white wine vinegar
  • 4 celery sticks, shredded
  • 1½ tbsp good-quality mayonnaise
  • ½ tsp Dijon mustard
  • ½ tsp wholegrain mustard
  • ½ tbsp parsley , finely chopped
  • ½ tbsp dill , chopped
  • 4 generous slices smoked salmon , to serve
