Ramen noodles with chilli salmon

Method

  1. Cook the noodles following the pack instructions and divide between 2 noodle bowls. Heat the stock in a deep frying pan and when it is simmering, slip in the salmon. cook for 2 minutes then add the chilli and spring onions and a dash of soy and cook for 3 minutes or until the salmon is firm to the touch.
  2. Lift a piece of salmon into each bowl and divide the broth between them. Add some coriander to each and squeeze over some lime or lemon juice.

    Cooked this for the family tonight, including the in laws, and it went down a treat. My 5.5 yo loved it (didn't add the chilli in hers). Very very easy to make. You could also use prawns instead of the salmon. Will make again!

    This was really easy to make and was very light but the flavour wasn't deep enough for my taste. Used prawns as I forgot to buy the salmon! They went really well with the noodles.

    Really beautiful! The chilli gave the broth a gorgeous, spicy taste. Def need the coriander and lime - finishes the dish off deliciously.

    Very easy to make & added mushrooms, sweetcorn & carrots in the end. The chiili & lime add a definite kick. Have made this twice & will make it again.

    This was really lovely, it was light and quick just what I need when we get in from work late. Unfortunately we had run out of Soy Sauce and it does need that. I am trying it again tonight with Prawns and the Soy. Cant wait.

    This will be a regular weekday meal for us. I added some yellow courgette cut into batons (because at this time of year everything has to have courgette added to it) and served with steamed broccoli. Completely forgot to add the lime, but it was fine without.

    This was a really tasty and quick weekday meal. I thought it needed some greenery so I added some Choi Sum. I also added a dash of oyster sauce to the broth.

    I make this all the time. I've made with prawns, chicken and steak (marinating the steak in some ginger and soy before stir frying and adding at the last minute.) I add miso soup sachet if I have in the cupboard too.
