Spring chicken in a pot

Method

  1. Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.
  2. Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

    Literally just finished eating this...it was my first go! Absolutely fantastic!!! I took into account peoples suggestions on here and didn't put in quite as much broccoli as suggested and I also put in another 200ml of stock and used chicken stock for more flavour. I love pesto and ended up adding about twice as much as the recipe said!! I'm now about to have seconds!!

    I made this for friends on saturday night and everyone thought it was bland.The only flavour was the pesto, which also turned the stock into a swampy-green soup. I was really disappointed as i even bought organic chicken and fresh stock etc. I will not be making it again.

    This is a firm favourite in my house. I use chicken stock and at least double the recommended amount of pesto. True, it doesn't look the prettiest dish, but the flavour is simply wonderful.

    Yum. This was impossibly tasty and went down a storm with my pesto-loving other half. I chucked in some soy beans which went very well. Will definitely be making this again.

    This was delicious. I cooked it for the whole family and everyone loved it. I will definately be making this again. It is a great way to get the children to eat up their veg!

    well, i haven't actually made this recipe yet, but i must say, it sounds fab! i personally don't like caseroles, so i think this could be the first one ive ever gotten exited about! in my mind caseroles were always stodgy, and full of pearl barley, but i think this will be lovely on a warm summers evening!!! yum yum! thanks x

    Yum, Yum, Yum....made this for my boyfriend and his mum, who is very fussy! and they couldn't get enough of it. Instead of spring onions I used leaks, and I doubled the amount of pesto recommended, it was lovely and very filling. I will defo be making this again

    Nice. Used one-and-a-half the amount of chicken, and twice the veg, and only have a small amount left over - 2 adults, and 3 small kids. It was a hit with the 6, 3 and 1 year old, all of it! Used chicken breasts, thighs would be better as the breast was a little dry. Will use more pesto/ extra basil next time, and some mint, as if anything was a little bland - which is probably why the kids loved it!

    I used asparagus instead of spring veg. And didn't have pesto but it was still a huge hit. My 2 and 4 year old boys ate it up very quickly too which is a great sign. Will make again with extra potatos for my husband.

    Really tasty and filling, boyfriend was loving it even though he's not that keen on vegetables! Will definitely make again, as it was easy and even withstood the extra half hour I simmered it because I was distracted. Lovely lovely recipe. I tasted a little bit before putting the pesto in and it was great then too, so if you don't like pesto, it will still be great.

    this is a great dish, i used up some shredded cabbage, leeks and green beans and we all loved it, very cheap to make as well as i only had to buy the chicken. will definately do it again mid week with all unused veg from weekend!

    Gorgeous! Even nicer with freshly home grown peas - melt in the mouth. Only thing we were missing was some crusty bread to soak up the juices. Wonderful!
