Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 500g boneless, skinless chicken thighs
  • 300g small new potatoes
  • 425ml low-salt vegetable stock (such as Kallo low-salt vegetable stock cubes)
  • 350g broccoli, cut into small florets
  • 350g spring greens, shredded
  • 140g petits pois
  • bunch spring onion, sliced
  • 2 tbsp pesto

Method

  1. Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.
  2. Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

Yum, Yum, Yum....made this for my boyfriend and his mum, who is very fussy! and they couldn't get enough of it. Instead of spring onions I used leaks, and I doubled the amount of pesto recommended, it was lovely and very filling. I will defo be making this again

well, i haven't actually made this recipe yet, but i must say, it sounds fab! i personally don't like caseroles, so i think this could be the first one ive ever gotten exited about! in my mind caseroles were always stodgy, and full of pearl barley, but i think this will be lovely on a warm summers evening!!! yum yum! thanks x

This was delicious. I cooked it for the whole family and everyone loved it. I will definately be making this again. It is a great way to get the children to eat up their veg!

Yum. This was impossibly tasty and went down a storm with my pesto-loving other half. I chucked in some soy beans which went very well. Will definitely be making this again.

This is a firm favourite in my house. I use chicken stock and at least double the recommended amount of pesto. True, it doesn't look the prettiest dish, but the flavour is simply wonderful.

I made this for friends on saturday night and everyone thought it was bland.The only flavour was the pesto, which also turned the stock into a swampy-green soup. I was really disappointed as i even bought organic chicken and fresh stock etc. I will not be making it again.

Literally just finished eating this...it was my first go! Absolutely fantastic!!! I took into account peoples suggestions on here and didn't put in quite as much broccoli as suggested and I also put in another 200ml of stock and used chicken stock for more flavour. I love pesto and ended up adding about twice as much as the recipe said!! I'm now about to have seconds!!

I love this recipe! It never fails to impress anyone that comes for dinner - although presentation wise it can look like a big green mess!! (But that's just my serving technique i think!!)
I used spinach instead of the spring greens and added an extra dollop of pesto.

I've made this recipe in a cooking class for people with diabetes and they all love it! We made fresh pesto which is so fast and tastier than the one you buy in jars.
You can also try different greens

Don't know if I went wrong with this recipe but found it very liquidy and lacked flavour, however my boyfriend really enjoyed it. Will add more pesto next time, as want to try it again since everybody else has enjoyed it so much!

Fabulous. Full marks from both my husband and our 18 month old son who could not get enough! I used a tomato pesto and it was very tasty as well as pleasing to the eye.

Delicious, light, tasty. Didn't have potatoes, so I cooked everything as per recipe and cooked some basmati rice on the side. Served in a deep plates with a little less liquid. Worked a treat.

Really, really love this recipe. So tasty and relatively easy to prepare and cook. Even my hubby loves it, and he is vegetable averse! An easy way to get some of his 5-a-day down him!!

Excellent, so easy to prepare and put together. Wasn't sure about the pesto but boy does it make the difference. Would recommend this to anyone who wants a quick and easy midweek meal, that is also healthy.
