Ingredients

  • 3 rashers streaky bacon, chopped
  • oil
  • 1 small onion, finely chopped
  • 1 large potato, peeled and cut into small cubes
  • 350ml chicken or vegetable stock
  • 400ml milk
  • 200g sweetcorn, frozen or tinned, drained if tinned
  • 2 tbsp snipped chives

Method

  1. Fry the bacon in a little oil in a pan – as soon as it starts to colour, add the onion and potato and cook until the onion starts to soften. Add the stock and milk and bring to a simmer. Cook for 5 minutes or until the potato is tender, then add the sweetcorn and heat through. Season and stir in the chives.

Nice but needed some tweaking. I'd read before cooking that it was a little thin so I doubled the amount of sweetcorn and blended half to make creamed corn. This helped to thicken the sauce although I still needed to add a small amount of corn flour. Substituted onion for leeks which worked well.

I made this a few days ago, however it looked really thin, so i blitzed all the ingredients together so the potato thickened and then added the sweetcorn afterwards. Absolutly delicious, will be making this again

A lovely soup with milk that isn't too creamy! After having read the comments before making it, I was sure I'd have to thicken it with some flour, but as I left it simmering for some time, stirring occasionally, it ended up with a nice texture. Might add a clove of garlic to it next time, but it will definitely be made again. Added an additional two rashers of bacon, as we had it as a main course.

I love this recipe. I've made it loads. Its really easy, takes a little longer than suggested as i like the sauce to thicken. Really warms you up on a cold day.

Added a clove of garlic and some spring onions to make it less boring. Comforting and filling but flavour average.

Just made a pot now and really enjoyed it's so easy to make. Glad I added the cornflour as it did look quite thin. Will be making again and think I will use smokey bacon next time for abit more flavour.

I made this tonight and it was really tasty. I reduced the stock and milk to around 300ml each and then whizzed up in blender which gave it a really good consistency. Hubby loved it! Would highly recommend!

This worked really well however I think I used too much oil, I had to use a bit because the onions/bacon were sticking to the bottom of my pan?? But overall the 'chowder' tasted lovely, very easy and quick to make. Will definitely make again.

Really easy to make, definitely needs cornflour and cook potato for about 20 mins. My hubby and I enjoyed it though.

OKish recipe. Says 20 mins, but it took me an hour to make - i don't know whether i did anything wrong!!!!! Not very clear method for beginners in soupmaking - i just guessed that pan meant frying pan and that meant make it all in it, perhaps that is usual - I don't know as it was my first attempt at making soup (or chowder)!!!!! Was that the right thing to do??? I found it quite bland and lumpy, but somehow at the same time it was delicious on a cold day!!!! Definitely need a spoon to eat it with - not the usual runny kind of soup. I missed out the chives as i didn't have any - but still tasted ok. I didn't need to thicken it - I found it thick enough as it was.

Really tasty. I liked it thickened better than as the recipe. Have made this a few times and enjoy it.

this is really tasty, especially for my husband who loves sweetcorn. I added a bit of cheese and a bit of flour to make it thicker as well. And I blended it with half the bacon and sweetcorn and then added the rest afterwards.

Just made this, doubled the quantity and added ornflour to thicken - very nice, but would have been even better with some single cream swapped with some of the milk. I'd make this again, but only as a way to use up leftovers.

Has anyone made this soup a couple of days ahead I am wanting to make a large batch and keep it for a few days. can you tell me if it keep or even will it freeze?

What a great recipe! I added smokey bacon to add a bit more depth of flavour and added bagel chips to float on the top of the chowder. After reading the comments I would cook this a day before to let the flavours infused more and I would also add cornflour to thicken it more.

Lovely however and I will be making this again.

Really easy and very tasty, kids weren't sure about it when they saw it but both loved it. Would use more bacon & thicken it a little maybe next time
