Linguine with broccoli & roasted peppers
A quick and easy pasta dish for an Italian-style midweek supper

- Cook the pasta following pack instructions. heat 2 tbsp olive oil in a pan, add the anchovy and garlic and cook on medium heat until garlic is golden. Remove from the heat and add the peppers and lemon zest.
- About 4 minutes before the pasta is done, add the broccoli to the same pan; drain when both are ready, reserving 2 tbsp of the liquid. return to the pan, add the pepper mixture and toss together with the reserved liquid.

- 4 roasted red peppers , from a jar, cut into chunks (look for ones in brine rather than oil)
- ½ lemon , zested
- 200g broccoli , cut into pieces
