An impressive looking dish packed with flavour, which can be prepared with a choice of vegetables!
Ingredients & equipment
For the steak:
1 tablespoon wasabi powder or paste
2 or 3 large cloves garlic
Salt to taste
1 tablespoon vegetable or sunflower oil
2 large or 4 small rib-eye steaks, 24 to 32 ounces
For the 'Asian' vegetables:
Whatever you can get on the day – look for Bokchoi, Pakchoi, snow peas, carrot batons, enoki mushrooms
A little oil
Some pre-made teriyaki sauce
A little garlic reserved from your steak
For the popcorn rice:
A large saucepan with a good solid base and a lid
Dry sushi rice
A teaspoon of sunflower oil
A teaspoon of dashi stock powder or other dry spice to your taste.

| Cooking the steak and popcorn rice: | |
| 1 | Heat a large heavy skillet or flat frying pan until it is just smoking. Place the wasabi powder in a small bowl and add about 1 tablespoon cold water. Stir to dissolve, adding water if necessary to make a paste. If you are using paste instead, squeeze it into a bowl. At the same time, put the pan for the popcorn rice on to the heat (medium) and toast the rice grains until they sizzle a little. Put the lid on and stir often. |
| 2 | Smash and peel garlic, then sprinkle it with salt and mince it finely. Stir into wasabi along with oil until smooth. Fry the meat on one side until well browned, 4 or 5 minutes. To avoid the paste burning and losing that wasabi tang, season the uncooked side with salt, then turn, and smear the cooked side with the paste. Cook 2 to 5 minutes longer, depending on how well done you like your steak, rest for at least 3-4. Around this point your popcorn should be ready. If it needs a little help shake the pan and it will go crazy. Keep a careful eye on the result as burnt popcorn of any type is foul. While it is still hot, add the dashi powder to the pan and shake thoroughly again. |
| Cooking the vegetables: | |
| A smoking skillet or wok is all you need. While the steak is resting, heat the oil until shimmering, throw in the veg and fry for a maximum of 2 minutes (one minute is better), throw in the garlic and toss it through towards the end of cooking and about a desert spoon of teriyaki for enough veg to serve 2 people. | |

| Arrange the veg on the plate – pile it up in fact. Drizzle a little soy over it to taste, cut the steak into large diagonal chunks and top with popcorn rice. Tuck in! | |
