Serves 4
Ingredients
1 tbsp olive oil
¼ tsp mustard seeds
½ tsp cumin seeds
½ tsp turmeric
1 small onion, peeled and diced
2 cm root ginger, peeled and diced
1 garlic clove, peeled and chopped
100g red lentils
250g cooked chickpeas
800 ml vegetable stock
50g spinach leaves

| Method | |
| 1 | Heat the oil in a pan and fry the spices for 3 minutes, and then add the onion, ginger and garlic and continue to cook until the onion softens. |
| 2 | Add the lentils and chickpeas, then stir in the stock. Bring to the boil and simmer for 15-18 minutes, until the red lentils are cooked and swollen. |
| 3 | Stir in the spinach, season and serve. |
