Curried spring greens with walnuts, topped with poached egg

Prep time: 10 minutes
Cooking time: 25 minutes
Serves 4

Ingredients

1 tbsp olive oil
2 red onions, peeled and thickly sliced
3 tsp Thai red curry paste
600g spring greens thickly shredded
300 ml vegetable stock
25g creamed coconut, finely chopped
4 eggs
75g walnut pieces, toasted and roughly chopped

Method
1 Heat the oil in a large pan and sauté the onion for 2-3 minutes.
2 Stir in the curry paste and cook for 1 minute before adding the spring greens. Stir a little to coat the cabbage with spicy onions.
3 Pour in the stock, bring to the boil, then simmer, cover for 6-8 minutes, stirring occasionally.
4 Stir in the creamed coconut, cooking until the liquid starts to thicken.
5 Poach the eggs.
6 Serve the cabbage in warmed bowls, topped with a poached egg and sprinkled with roughly chopped walnuts.
