Serves 4
Ingredients
250g new potatoes, halved
250g broad beans
4 tbsp olive oil
juice of ½ lemon
½ tsp Dijon mustard
½ tsp honey
150g artichoke hearts, halved
4 spring onions, sliced
400g salmon fillets
small handful mint leaves, shredded
100g rocket
½ cucumber, cut into thin slices with vegetable peeler
| Method | |
| 1 | Cook the potatoes in boiling water for 10 minutes. Add the broad beans and cook for a further 3-5 minutes, until the vegetables are tender. Drain and refresh under running cold water. |
| 2 | Remove the broad beans from their skins. Toss the potatoes and beans in 1 tbsp olive oil in a large bowl. |
| 3 | Whisk together the remaining olive oil, lemon juice, mustard and honey. |
| 4 | Grill the salmon steaks for 3-4 minutes on either side, until cooked through. |
| 5 | Lightly flake the fish and add to the potatoes and beans. |
| 6 | Add the remaining ingredients and gently toss together with the dressing. |
