Gingered turkey and mangetout stir-fry

Prep time: 15 minutes
Cooking time: 18-20 minutes
Serves 4

Ingredients

2 tbsp sunflower oil
4 cm piece root ginger, peeled and finely chopped
400g turkey breast meat, cut into thin strips
2 garlic cloves, crushed
1 red pepper, deseeded and thinly sliced
150g chestnut mushrooms, sliced
¼ Savoy cabbage, shredded
200g mangetout
2 tsp soy sauce
small handful coriander leaves, chopped
1 tbsp sesame seeds
cooked basmati rice to serve

Method
1 Heat the oil in a wok or large frying pan and cook the ginger and turkey for 4-5 minutes.
2 Add the garlic and pepper and stir-fry for 2-3 minutes.
3 Add the mushrooms, cabbage, mange tout and soy sauce and continue to stir-fry for a further 5-6 minutes, until the vegetables start to soften.
4 Stir in the coriander and sesame seeds and serve with rice.
