Serves 4-6
Ingredients
300g sweet potato, peeled and chopped
250g parsnip, peeled and chopped
150g potato, peeled and chopped
1 tbsp olive oil
1 red onion, peeled and diced
2 sticks celery, diced
2 garlic cloves, crushed
200g carrots, peeled and grated
300g macadamia nuts, roughly chopped
2 tbsp parsley, chopped

75g Manchego cheese, grated
Steamed green vegetables to serve
| Method | |
| 1 | Preheat the oven to 200C/Gas 6. |
| 2 | Cook the sweet potato, parsnip and potato in boiling water until tender. Drain and roughly mash. |
| 3 | Heat the olive oil in a frying pan and saute the onion, celery and garlic for 2-3 minutes. |
| 4 | Add the onion mixture to the mashed vegetables, along with the grated carrots, macadamia nuts and parsley. Season well. |
| 5 | Pour into a lightly greased ovenproof dish and sprinkle with grated Manchego cheese. |
| 6 | Cover with foil and bake for 30 minutes. Remove the foil and cook for a further 10 minutes, until the cheese is golden. |
| 7 | Serve with steamed green vegetables. |
