Macadamia nut roast

Macadamia Nut Roast

Cooking time: 45 minutes
Serves 4-6

Ingredients

300g sweet potato, peeled and chopped
250g parsnip, peeled and chopped
150g potato, peeled and chopped
1 tbsp olive oil
1 red onion, peeled and diced
2 sticks celery, diced
2 garlic cloves, crushed
200g carrots, peeled and grated
300g macadamia nuts, roughly chopped
2 tbsp parsley, chopped
seasoning
75g Manchego cheese, grated
Steamed green vegetables to serve

Method
1 Preheat the oven to 200C/Gas 6.
2 Cook the sweet potato, parsnip and potato in boiling water until tender. Drain and roughly mash.
3 Heat the olive oil in a frying pan and saute the onion, celery and garlic for 2-3 minutes.
4 Add the onion mixture to the mashed vegetables, along with the grated carrots, macadamia nuts and parsley. Season well.
5 Pour into a lightly greased ovenproof dish and sprinkle with grated Manchego cheese.
6 Cover with foil and bake for 30 minutes. Remove the foil and cook for a further 10 minutes, until the cheese is golden.
7 Serve with steamed green vegetables.
