Ingredients
5g mint leaves, chopped
15g parsley leaves, chopped
3 tbsp capers
5 anchovy fillets
1 garlic clove, crushed
1 tbsp lemon juice
5-6 tbsp olive oil
4 sweet potatoes, peeled and chopped
8 mackerel fillets
| Method | |
| 1 | Using a pestle and mortar, or small blender, mix together the mint leaves, parsley, capers, anchovy fillets and garlic, until mashed. Pour in the lemon juice and olive oil and mix well until you have a thick, creamy green sauce. |
| 2 | Cook the sweet potatoes in boiling water until tender. Drain and return to the pan. Season well and slightly crush with a fork. |
| 3 | Heat 1 tbsp of olive oil in a pan and cook the mackerel fillets, skin side down first, for 3-4 minutes. |
| 4 | Serve the mackerel fillets on a bed of crushed sweet potatoes, drizzled with salsa verde. |
