Serves 4
Ingredients
1 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
½ tsp ground ginger
½ tsp ground cinnamon
2 garlic cloves, crushed
4 chicken breasts, cut into bite-sized pieces
500 ml chicken stock
1 small butternut squash, peeled deseeded and cut into bite-sized pieces
50g black olives
8 prunes
2 tbsp chopped parsley
couscous to serve
| Method | |
| 1 | Heat the oil in a large pan and cook the spices with the garlic for 2-3 minutes. |
| 2 | Add the chicken, and stir to coat with the spices. |
| 3 | Pour in the stock, add the butternut squash, olives and prunes, bring to a simmer and cook for 18-20 minutes, until the butternut squash is tender and the chicken cooked. |
| 4 | Stir in the chopped parsley and serve with couscous. |
