Spiced butternut and chicken tagine

Cooking time: 25 minutes
Serves 4

Ingredients

1 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
½ tsp ground ginger
½ tsp ground cinnamon
2 garlic cloves, crushed
4 chicken breasts, cut into bite-sized pieces
500 ml chicken stock
1 small butternut squash, peeled deseeded and cut into bite-sized pieces
50g black olives
8 prunes
2 tbsp chopped parsley
couscous to serve

Method
1 Heat the oil in a large pan and cook the spices with the garlic for 2-3 minutes.
2 Add the chicken, and stir to coat with the spices.
3 Pour in the stock, add the butternut squash, olives and prunes, bring to a simmer and cook for 18-20 minutes, until the butternut squash is tender and the chicken cooked.
4 Stir in the chopped parsley and serve with couscous.
