Pilau rice with mushrooms and cashews

Prep time: 10 minutes
Cooking time: 30-35 minutes
Serves 4

Ingredients

1 tbsp olive oil
1 onion, peeled and sliced
2 garlic cloves, peeled and thinly sliced
250g chestnut mushrooms, sliced
275g wholemeal basmati rice
750 ml vegetable stock
100g cashew nuts, toasted
2 tbsp chopped parsley

Method
1 Heat the oil in a pan and sauté the onion and garlic for 3-4 minutes. Add the mushrooms and continue to cook for 4-5 minutes.
2 Stir in the rice and cook for 1 minute before pouring in the stock. Bring to a simmer and cook, covered, for 20 minutes, until all the liquid has been absorbed and the rice is cooked.
3 Remove from the heat and stir in the toasted cashew nuts and chopped parsley.
