Ingredients
1 tbsp olive oil
1 onion, peeled and sliced
2 garlic cloves, peeled and thinly sliced
250g chestnut mushrooms, sliced
275g wholemeal basmati rice
750 ml vegetable stock
100g cashew nuts, toasted
2 tbsp chopped parsley
| Method | |
| 1 | Heat the oil in a pan and sauté the onion and garlic for 3-4 minutes. Add the mushrooms and continue to cook for 4-5 minutes. |
| 2 | Stir in the rice and cook for 1 minute before pouring in the stock. Bring to a simmer and cook, covered, for 20 minutes, until all the liquid has been absorbed and the rice is cooked. |
| 3 | Remove from the heat and stir in the toasted cashew nuts and chopped parsley. |
