Fantastic cheesecake! Everyone was SO impressed as it looks amazing and it tastes delicious too. Remember to cool it down completely in the fridge before serving ( I didn't do this the first time I made it and it was a mushy raspberry cheesecake!) I'll be making this one again and again! Next time with blueberries I think... :-)

Brilliant recipe. I made it using red and black currents from the garden. Put about 250g in the cake. Cooked about 200g down with a cassis liqueur for the topping. Delicious.

I actually used Fromage Frais instead of sour cream as I had picked up the wrong tub and the cake was still delicious. Real easy to make and a winner with all my friends. Definitely will be making this again.

I made this for a family meal yesterday - everyone loved it! most had 2nd helpings too! I used 12 digestives for the base as I prefer it to be slightly thicker. It was quite wobbly in the middle when it came out of the oven but overnight in the fridge set it to a good consistency. This is the 2nd time that I've made this cheescake and it won't be the last!!

The secret of getting a cheesecake which doesn't crack open on the top (according to Nigella) is not to beat the mixture too much. It's only when you introduce too much air that it cracks.

A lovely recipe to end a specal meal. I cooked for friends, one of which is a chef and they all loved this cheesecake as it was light and fruity. I would highly recommend this to anyone.

Delicious! Super easy and looked super impressive! However, I would recommend doubling the mixture for the biscuit base as it only made a small amount - just enough for a very thin layer across the bottom of the tin.

Made this for a dinner party a couple of weeks ago. Made it the night before and just added the remaining and raspberries and coulis just before serving. It went down a treat....absolutely delicious. Definitely will make again soon. 10/10

I made this for a dinner party and it was well received by all, would definitely make again, although mine also cracked badly, maybe as I didn't cool it in the oven.

I am not a pudding expert which is why I thought I'd try this easy dish....so glad I did, it turned out perfectly and my friends loved it! Will definitely be a dinner party favourite of mine!

This cheesecake won us 1st prize in a little bake off competition! Substituted the raspberries for blueberries and used half mascarpone, half light philadelphia. Instead of digestives we used ginger biscuits and made a thicker base with one & half times the biscuits. We also put a little more vanilla. Delicious!

Love this recipe. Very easy compared to other baked cheese cake recipes. Only change I made was increased the base ingredients as I like a think base so did 1.5x. Oh and it really does come out looking like the picture!
