I made this cheesecake yesterday for my husband's bday as he's a big fan of cheesecakes. He loved it and we are already haft way finishing the cake after one night. (just two of us!)
I used low fat cheese instead of cream cheese and used haft blueberries and haft raspberries to reduce the cost and also make it a bit more interesting. I also forgot to use vanilla extract (I put in a teaspoon of honey instead). It went down well. The cake had a few cracks but after researching, I got to know its very normal and it doesn't affect the taste. I am very happy with my cake and already looking forward to make it again. It was very very very easy indeed!

Made this for Mothers Day and went down really well. I'm not the best baker and needed something simple but impressive - best cheesecake I've made

This recipe is fantastic. It is very rich, but absolutely delicious. I am definitely making it again soon. I used frozen raspberries (defrosted first) worked out cheaper and I don't think you could tell.

Great, everyone loved it, children and adults. Not very good with desserts and thought mixture looked too runny in the bowl. Turned out perfect though.

My 11yr old daughter made this with minimal supervision. Easy recipe to follow & looks very impressive. Lovely flavour, not too sweet or tart. Will definitely make again.

This was my first time making cheesecake and I couldn't have picked a more perfect recipe to try. It's fool proof! I did change the crust to a pecan crust and it was delicious. 1c graham crumbs 1c pecans pulsed till small crumbs 2 tbsp flour 1/2 c sugar all whisked together and add a 1/2 c melted butter. No need to bake the crust first just pressed all but a cup onto the bottom of the pan lined with parchment for easier removal and then the remaining cup for the sides.

Currently in the oven! Wondering if I can leave it overnight in the fridge before adding the sauce?

I made this for a dinner party using Morrisons NuMe extra light cream cheese, half fat soured cream and lurpak light and it worked brilliantly, and worked out at 300 calories per portion (for 10). A really delicious cheesecake and so easy to make.

I was unsure when to take this out I the oven. Edges were lightly browned but the middle had cracks! Did I do something wrong? Also it didn't taste great at first but once I left it over night in the fridge and it was nicely chilled it tasted much better. I used wheat-free biscuits which were a little salty so would add some sugar to the base next time.

This is a lovely tasty cheesecake. The only reason I havnt given it 4 starts is because it is slightly more time consuming than some other cheesecakes that don't require baking. Also you need far more than 150 g raspberries to make up the sauce as shown in the photo. By the time you sieve it out, you will not be left with much sauce. However, once made well, it is very tasty and looks lovely!

Quick question.....at the beginning should I line/grease the tin???....or just line/grease it for the biscuits or neither??
