Sediment

Pronounce it: sed-ee-ment

In the food and wine worlds, sediment is used to describe a grainy or sludgy substance.

Sediment can develop in red wines after a few years in the bottle. Remove it by slowly decanting the wine.

In cooking, all the bits of meat and juices left in the roasting tin are known as sediment. They can be used to bring flavour to gravy when you deglaze the pan.
