Seafood papillote

Papillote

Pronounce it: pah-pee-yot

A method of cooking in which food is baked inside a sealed wrapping of greaseproof paper or tin foil. As the food bakes releases steam and causes the parchment to puff up. At the table, the paper is slit and peeled back to reveal the food and release the aroma.

On a menu, you might see this described as 'en papillote', literally, 'in paper'.
