Wild Alaska salmon fillet burger with dill mayo
20 minutes • SERVES 4 • EASY

wild Alaska salmon 4 x 150g fillets
olive oil 2 tbsp
ciabatta rolls or burger buns 4, split in half
crisp lettuce leaves 8
tomatoes 2, sliced
cucumber ¼, sliced
lemon juice of ½
mayonnaise 3 tbsp
dill or parsley 1 tbsp, chopped


1 Heat the grill. Arrange the salmon fillets on the grill rack or on a oiled baking sheet, brush with olive oil and season. Grill for 6 to 8 minutes, turning once. The fish is cooked when the flesh is opaque and flakes easily.
2 Lightly toast the cut sides of the ciabatta rolls or burger buns, then top the bases with lettuce, tomato and cucumber.
3 Arrange the salmon fillets on top of the salad, then add a squeeze of lemon juice and some black pepper. Mix the mayonnaise with the dill or parsley and spoon on top of the salmon, then put the tops on.
